Nakara, Business in Tofu Dregs

Inspired by the Spanish food from, nachos, Students of Bogor Agricultural University (IPB), have made an innovation of nachos from tofu dregs. Sururum Marfu'ah and his team members: Zulfani Addin P, Miranthi Dhaifina Sabila, Niswana Wafi Alfarda, and Bayang Salju Snow Nuan through the Student Creativity Program (PKM) of Entrepreneurship, reuse tofu dregs from tofu producers in Bogor Regency to make a product called nachos. Using the term from Sakura, okara (tofu dregs), nachos makes it more easily known among young people. Labeled as Nakara, tofu-dreg-based nachos are now ready for consumption.
Commonly, nachos are made from corn, and in Indonesia nachos has been sold as a snack of various flavors. The innovated use of tofu dregs for making nachos is a fresh idea for the local food industry. Tofu manufacturers as a source to get the tofu dregs are also easy to find because the tofu is still a side dish for people in Indonesia.
"Currently the utilization of tofu dregs is still limited, i.e. only as animal feed, but it can be consumed as high protein food – the protein content in tofu is higher than that in the tofu itself," Sururum said. With his team, he wants this innovated creation to inspire communities by utilizing tofu dregs.
Uum and his team managed to find a formulation that could replace half of the corn used in producing Nakara by using tofu dregs. Then, how is the taste of this okara nachos? "We have tried to compare nachos made from a hundred percent corn and nachos made from tofu dregs, and found that the taste of the latter product is preferred," he said.
In addition to its various composition, Nakara also has several flavors. These include corn, balado, and hot balado. Meanwhile the price offered depends on the package size. Two choices of Nakara packages are of 50 grams and 100 grams for Rp 5000 and Rp 10,000 respectively.
