IPB Researchers Developed High Fiber Galamai with Passion Fruit and Tunggak Bean Substitution

Galamai is one of the traditional processed foods derived from Payakumbuh, West Sumatra. In Garut known as dodol Garut, while in ??West Sumatra better known as Galamai. Galamai is generally made from rice flour, coconut milk and sugar, so it is only rich in carbohydrates and fats.

Since Galamai contains carbohydrates and fats only, it needs to be added with fiber. The function of fiber in food is to absorb water in the colon, so that the volume of the stool becomes bigger and softer. Thus, feces do not take long to be removed as food scraps and can prevent disease in the colon and rectum.

Cowpea is nuts with vegetable protein sources that have not been widely used, especially in the form of flour. Stumps per 100 grams contain 22.9 percent protein and 61.6 percent of carbohydrates. In addition, it also has a high antioxidant activity of 29.9 percent. Since the potential of cowpeas is quite high, it can be a great opportunity to be put into good use.

Passion fruit is one of the agricultural products in Indonesia whose production continues to increase every year. In Indonesia, many passion fruit are cultivated in Medan, Padang and South Sulawesi. Passion fruit has much nutrient content, one of which is very high fiber content. Passion fruit is also useful against inhibition of cancer cells and decreased cholesterol because of its high fiber content of about 10.4 grams or 27 percent.

This is what underlies the researchers Bogor Agricultural University (IPB), Dr. Ir. Sri Anna Marliyati, M.Si along with student of Department of Community Nutrition, Faculty of Human Ecology of IPB, Nur'afiah Putri Imral, to make an innovation by developing high-fiber Galamai substituted with passion fruit and cowpea.

The study consisted of several stages including designing formulas, manufacturing process, organoleptic test, determination of selected formula, analyzing of selected nutritional content, fiber content and antioxidant activity.

The results showed that Galamai contains a powerful antioxidant equal to 45 ppm. The resulted Galamai per 100 grams contributes 31.67 percent fiber, so the galamai can be claimed as high-fiber foods based on the Food Nutrition Reference Lab. (TK)
