Collaborating with Women’s Farmer Group Mulya Kencana, IPB University Students Bring Innovation in Processed Cassava Nuggets

A number of IPB University Innovation Real Thematic Work Lecture (KKN-T) students in Mulya Kencana Village, Tulang Bawang Tengah District, Tulang Bawang Barat Regency, Lampung collaborated with women farmer groups (KWT) and young women from each Neighborhood to make processed cassava in the form of cassava nuggets. This was realized through the joint cooking program which was guided by IPB University Thematic Real Work Lecture students at the Mulya Kencana Village Hall.

Salma, a student at IPB University, revealed that cassava is a potential food ingredient that is abundant and easy to find in this village. Of the various types of processed cassava, it has not been found that the people of this village have processed it into chicken nuggets.

"Therefore, IPB University Thematic Real Work Lecture students brought innovation to this village by presenting an idea in the form of cassava-based chicken nuggets as a substitute for flour," he said.

Salma explained that the superiority of cassava compared to wheat flour is that it is safe for consumption for people with gluten intolerance, because cassava does not contain the gluten protein found in wheat flour.

This joint cooking activity went well and smoothly and received a positive response. By introducing this innovation, it is hoped that cassava chicken nuggets can become an option for fulfilling household nutrition as well as entrepreneurial ideas.

"For the continuation of this innovation, it is hoped that mothers of the women farmers group can improve the quality and taste of this product so that it is more ready to be branded as the women farmer group of Mulya Kencana’s business product," he hoped. (Salma/Rz) (IAAS/SND)
