FAPET IPB Organized Training Course on Quality Assurance System for Poultry Slaughterhouse
Faculty of Animal Husbandry of Bogor Agricultural University (FAPET IPB) and Rumah Potong Hewan Unggas (RPHU Poultry Slaughterhouse) of PT. Ciomas Adisatwa, Parung, Bogor, in collaboration with Indonesian Livestock Logistics Forum (FLPI) organized the Training Course on Livestock Logistics Forum, in FAPET’ Meeting Room, IPB Campus, Dramaga, Bogor, on 18 January 2018. The theme of the training course was on "Management and Quality Assurance System of Poultry Slaughter House (RPHU)” and Site Visit to RPHU.
Vice Dean for Resources, Cooperation and Development of FAPET IPB, Dr. Rudi Afnan, stated that this special event was thematically packaged to provide better understanding for poultry business entity about nationally standardized RPHU, which must meet the poultry slaughter inspection system. Meat and poultry processing plants are premises where meat (including game meat) for human consumption is processed, treated, boned, cut up, packed, packaged or stored. In addition, to Training Course was also to improve the awareness of the communities on the competitive and profitable RPHU, means they should be promising business.
According to him, IPB is very competent and correlated with poultry slaughterhouse associated with the application of poultry slaughtering techniques that meet halal requirements, so that customer satisfaction can be maintained properly.
Demand for food in Indonesia is expected to increase significantly towards 2050 as the result of significant income growth and urbanization. For the period 2009 to 2050, among the biggest projected increases in the value of food group demand are poultry meat, beef and sheep and goat meat, all expected to rise by a factor of 14. Therefore, the Fisheries, Agriculture and Food Security Agency develop new slaughterhouses for easier control of the quality of chicken meat sent to the city’s markets. He added that with the growth of RPHU business is also encouraged by Permentan policy No.61 of 2016 which requires for farmers or groups of livestock / cooperative that produce 300 thousand chicken per week must have RPHU with cooling system chain. Currently most of the poultry in Indonesia are slaughtered in small scale Poultry Slaughterhouses (TPU), Indonesia’s poultry slaughter and processing mostly takes place in backyard facilities, poor food hygiene practices and food safety, they do not have any halal certification and Veterinary Control Number (NKV) and cooling system .
Accordingly, he explained that RPHU and FLPI must perform a maximum quality control, which consists of production, processing, and marketing of products. The slaughter of animals in the RPH must follow regulations concerning animal welfare in Indonesia. Based on the Decree of the Minister of Agriculture No. 13 / OT.140 / 1/2010 on RPH Ruminansia Requirement and Meat Cutting Plant, the slaughter of animals must be carried out correctly and accurately, they must be healthy ruminants and must be slaughtered in the correct way and halal, (in accordance with veterinary public health requirements, animal welfare and Islamic sharia. Quality control needs to be done at every stage of production starting from the receipt of raw materials (live chickens), during processing to finished products (carcasses / chicken meat) and ready to be sold to consumers. Aspects that need to be considered in the system are factors of hygiene, sanitation, halal, and animal welfare. The "halal" concept is a criterion for quality and food safety with reference to the physicochemical, microbiological characteristics of a food, but also of all stages of production, processing, storage, transportation and marketing of a food. In this case the needs of consumers should really pay attention to the good and the maximum. The purpose of quality control is to achieve a predetermined quality standard. Quality control is useful for controlling processing, fostering industry development, fostering marketing, and most importantly to protect consumers.
Keynote speaker for this special event was the Director of Kesmavet-Ditjen PKH drh. Syamsul Ma'arif, M.Si., who presents his paper on "RPHU Regulation in Indonesia".
