Sushi by IPB students at Pimnas (National Student Science Week)

Sushi is a Japanese food consisting of rice shaped with side dishes (neta) such as seafood, meat, raw or cooked vegetables. Sushi rice has a soft taste sour because it is seasoned with rice vinegar, salt and sugar.

 

However, what happens if sushi is in the hands of an IPB student. Well, it is unique in that its Indonesian flavor is felt because of the touch of local raw materials of Indonesian origin.

 

It is as described by a female IPB student,  Nur Laili Fitriany Zaen, a participant of  Pimnas XXVI, one of the team members of Student Creativity Program in the field of Entrepreneurship (PKMK) with the title: " CORIRO (Colorful Rice Roll): Local Rice-Based Sushi Roll of Natural Coloring as the Alternative Healthy and Practical Snacks for Active People."

 

"The advantage is the use of local raw materials native to Indonesia, and of course to the taste of Indonesian who like vegetables, "said Laili when interviewed (11/9) in Pimnas XXVI at University of Mataram, NTB.

 

Laili said that sushi by her team is a modification of the existing sushi, by using a mixture of Indonesian native rice and glutinous rice in a predetermined composition.

 

"Its content remains fresh fish coupled with a variety of vegetables such as green beans, carrots, and so on. Next year its Halal Assurance Certificate will soon be taken care of, and a shop will soon be opened in Bogor," she said.

 

As for coloring, like other healthy foods, Laili and his team prefer natural dyes derived from vegetables such as orange color of carrots and red peppers, green from spinach, and yellow from turmeric.

 

 "We intentionally make this sushi for those who are active and do not have time to provide healthy food themselves," she added.

 

This PKMK is under the guidance of Prof. Dr. Ir. Sri Laksmi Suryaatmadja, MS with the team members: Muhammad Wildan M, Amelia Septiany, Hilman Dwi Putra, Nur Laili Fitriany Zaen and Lulu Maknun.

 

On the second day session of presentations in the annual Pimnas there were 11 groups of IPB who presented their scientific works, while on the first day there were seven groups. Presentation locations spread across the Faculty of Engineering, Faculty of Agronomy and Food, and the Faculty of Law, University of Mataram.

 

IPB team claimed to have a quite smooth presentation as it has already made preparations during quarantine. (Mtd)
