IPB Organized Training Course on “the Application of Hygiene and Sanitation for SMEs of Home Industry on Food of Cikarawang Village

Center for South East Asia Food Agricultural Science and Technology (SEAFAST) of the  Institute of Research and Community Empowerment of Bogor Agricultural University (LPPM IPB) organized the Training Course on "The Application of Hygiene and Sanitation for Small and Medium Micro Enterprises (SMEs) of Home Industry on Food”, on Wednesday, 3 May 2017, at Cikarawang Village. The course was carried out on Gapoktan Hurip, Cikarawang village, Dramaga District, Bogor Regency. It was participated by 15 delegates of SMEs that produce various processed foods such as banana / cassava chips, brownis cake, dodol, sweet potato drink, and rangginang.

Head of Sub Directorate of e-Learning Development and Management of the Directorate of Academic Development Program, who is also faculty member of the Department of Food Science and Technology, Faculty of Agricultural Technology (FATETA  IPB), Ir. Sutrisno Koswara, M.Si, said that such Training Course on Food Process is the most demanded course for the community life. However, they usually pay much less attention to issues of food safety, especially the sanitation and hygiene.

Sutrisno explained on the implementation of sanitation that should be considered by the food processing business actors. The prevention of cross-contact of food products with hygiene and sanitation as assessed by Household Food Products (IRTP), particularly on hygienic of their production equipment, water supply, employees, are certified as medically fit to work in a home industry on food, to change their footwear and protective clothing and to wash their hands, and maintaining their environmental sanitation.

"In addition, as we understand that sanitation and hygiene are critical to health, survival, and development, sometimes the owners of home industry on foods do not pay attention on them. Toilets or latrines should be designed and constructed in such a way that they should not facing and away from the  kitchens, "he said.

So the owners of home industry on foods must have a food safety plan and observe the food safety regulations, they should meeting the requirements of the Regulations for the safety of the community. We have to prevent food poisoning our customers. (Wied)
